Summary: A veteran hotel kitchen pro points at where F&B really fails: outlet ownership, recipe standards and resource allocation, not the menu.

## Article

There's a conversation repeated in almost every hotel with a restaurant that won't take off. People talk about the menu, the concept, the chef, whether the room faces the street or looks onto an interior courtyard. And they almost never talk about what actually sinks it. A veteran hotel kitchen professional lays it out bluntly in [this opinion piece published by Hospitality Net](https://www.hospitalitynet.org/opinion/4134572/most-hotel-restaurants-dont-have-a-food-problem-they-have-a-structure-problem): the failure isn't in the menu, it's in how the business was built on the inside.

The three points he raises are the usual ones, which is why they sting. **Unclear outlet ownership**: nobody really knows who runs that space, whether it's management, corporate F&B or the hotel's own general manager. **No recipe standards**: each shift cooks its own way, and cost per plate drifts with nobody tracking it. **Misallocated resources**: staff, hours and budget spread by inertia, not by what each outlet actually returns. When those three pieces are loose, it doesn't matter how good the food concept is.

My read is simple. Before touching the menu again, check who decides, with what recipe book and with what resources. That isn't fixed with a renovation or a celebrity chef. It's fixed by putting someone in charge of that outlet as if it were their own business.
